Chicken Cacciatore

Makes 4 Servings

Ingredients
  • 1/2 Cup Mushrooms, sliced
  • 1/2 cup each Onion, Celery, chopped
  • 1 Can diced tomatoes
  • 1/2 Cup tomato puree
  • 1 tsp. each Oregano, Basil
  • 2 cloves Garlic, minced
  • 1/8 tsp. Pepper
  • 1 lb. Chicken breast, boneless, skinned
  • 4 Cups Cooked spinach noodles
Cooking Instructions

Combine mushrooms, onion, celery and ¼ Cup water in 10" skillet; cover and
cook until tender. Stir in tomato, tomato puree, and seasonings. Cover and
simmer 30 minutes; uncover and simmer an additional 15 minutes. Serve over
noodles.
